Japanese curry is one of the most popular dishes in Japan. It is favoured by both kids and adults. Not only it is easy to make, it can also be versatile to cook with different vegetables and protein of your choice.
The common vegetables used are onions, carrots and potato and the popular protein chosen are chicken, beef and pork.
All the ingredients can be purchased from your local supermarket. It is a perfect dish for a busy weeknight dish. Healthy, nourishing and absolutely delicious!
Ingredients:
- 400-500g boneless chicken thighs (alternatively, you can use beef, pork, seafood or any seasonal vegetables)
- 1 1/2 Tbsp butter or vegetable oil
- 1-2 small onions
- 2 carrots
- 2-3 potatoes
- 5-6 cubes Japanese curry roux (Japanese curry mix)
- 600ml water
Methods:
1. Chopped all the vegetables and cut the chicken into bite sizes
2. Heat the butter in a large pot over medium heat and sauté the onions for 2 mins or until translucent
3. Add the carrot, potato and chicken and cook until the chicken is no longer pink
4. Add the water and bring to boil. Reduce the heat and simmer until the potato are soft. Add more water if it is too dry.
5. Turn off the heat. Add curry roux and stir until the curry roux dissolved. Simmer for 5-10 mins until thicken. Stir occasionally.
6. Serve with rice, udon or bread.
Toppings (optional):
- Boiled eggs
- Steamed broccoli
- Sliced cucumber or tomatoes - Shallow fried vegetables
**Secret ingredients:
- 1/4 cup grated apple
- 1 Tbsp honey
Adding grated apple and honey once the water boiled. This will give your curry the signature sweeter flavour. :)

Japanese Curry Roux is a combination of butter, stock, curry powder, garam masala, white pepper and flour.
There are different brands available. They normally come with 3 different spicy level -mild, medium and hot.
The instant Japanese Curry Roux makes cooking Japanese curry easier and convenient.
